Lemony Lemon Meringue Pie

Ingredients

Pie Ingredients

  • 1 Baked Pie Shell
  • 1 can Eagle Brand milk
  • 1/2 cup real lemon juice
  • 2 egg yolks

Meringue Ingredients

  • 2 egg whites
  • 1/4 teaspoon cream of tarter
  • 1/4 cup sugar

Method

Pie Instructions

  • 1)

    In bowl combine milk and lemon juice.

  • 2)

    Blend in egg yolks.

  • 3)

    Pour into pie crusts.

Meringue Instructions

  • 1)

    Beat egg whites with cream of tarter till fluffy.

  • 2)

    Gradually add sugar until stiff peaks form.

  • 3)

    Spread over filling to edge of crust.

  • 4)

    Bake at 425 degrees for 3 minutes*.

  • 5)

    Chill 2 hours.

  • 6)

Notes

*If you are worried about eggs in the pie being undercooked like me you can bake at 350 degrees for 25 minutes. Make sure to keep an eye on the meringue!
